A PLANT-POWERED BREAKFAST: CHECK OUT HOW THE HAPPY VEGAN COUPLE START THEIR DAY WITH DELICIOUS FOOD!

Almost every day we eat the same satisfying, nutritious breakfast (though sometimes we eat it for lunch)! In this video, we show you how to prepare the most healthy form of oatmeal which are called oat groats. We batch cook our groats in the Instant Pot and use them for several days. Every morning we recook a couple of cups and add a bunch of different kinds of frozen fruit and other healthy ingredients. When it's done, it's a powerhouse of nutrients that is delicious to eat! We then show you a couple other things, we eat as we start our day, such as beans and greens.

Three Notes about the video that we didn't mention: 1) We usually add some cooked apple to our oatmeal but we didn't have any for this video. We just chop up some apples, put then in a frying pan with a bit of water, add cinnamon, and then cook to desired tenderness. We batch cook these too so we don't have to make them every day. 2) We typically put a bit of amla powder in the cooking pot too but we were out of it. 3) For the beans and greens, we warm it in the microwave for 3060 seconds. Or we keep the greens raw and just heat the beans and cashew cheese.
Following is the recipe and steps to make the oat groats bowl.

HAPPY VEGAN COUPLE OAT GROATS BOWL 1 SERVING
for best health, use organic ingredients as much as possible

Ingredients for bowl once the oat groats are cooked in the Instant Pot:
1 cup of cooked oat groats handful of raisins
a few shakes Ceylon cinnamon and a bit of black cumin seed ground
2 TBSP ground flaxseed a bit of amla powder
1/3 of banana 1/3 cup unsweetened soy milk
cooked apples with cinnamon (as much as you like)
1/2 cup frozen or fresh blueberries
Plus a couple strawberries, raspberries and mangoes (frozen or fresh)
Some walnuts

DIRECTIONS FOR MAKING OAT GROATS IN THE INSTANT POT & THEN ADDING THE REST OF THE INGREDIENTS WE EAT IN OUR OATMEAL BOWL
1. The oat groats bag we purchase from Natural Grocers has about 2.5 cups of groats in it. We put this amount in our 6 quart Instant Pot and add 5 cups of water. Cover and close the pot and turn the pressure release valve to sealing.

2. Cook on high pressure, normal heat, for 7 minutes. The Instant Pot will now begin cooking. It will take about 1520 minutes for the IP to build up to pressure. Once it gets there, it will then start the 7 minute cooking time. Once the 7 minute cooking has occurred, the IP will beep. At this point, let the Instant Pot do a natural release for about 7 minutes. Press cancel to turn off IP. Now release the rest of the steam; place a paper towel over the valve before you turn it as hot steam will still likely come out and you don’t want to burn your hands or face. Use a spatula or something like it to turn the valve rather than using your fingers.

3. Once all steam has been released, carefully open the IP and strain the oat groats in a colander to drain out the excess water used for cooking.

4. Store oat groats in fridge and take out the amount you want when you are ready to make your oatmeal bowl.

5. To now cook the other oatmeal ingredients with the oat groats do the following:

6. Place 1 cup of cooked oat groats in saucepan. Now add the raisins, cinnamon, black cumin seed, amla powder, flaxseed, and banana to the pot.

7. Next add the unsweetened soy milk to the groats. Smash the bananas down if you like with a spatula and stir.

8. Cook the oats on medium to medium low heat until the liquid is absorbed.

9. Next add your fruit and cook for a few more minutes or don’t even add the fruit to the heat.

10. The oatmeal is done when all or most of the soy milk has been absorbed. If you prefer to have it more “milky,” then cook it less.

11. Top it with some chopped walnuts.

We also eat some broccoli sprouts we make ourselves (check out our video on Happy Vegan Couple) and some sauerkraut every morning too.

We also eat a bowl of beans and greens mixed with a bit of cashew cheese (see our video on Happy Vegan Couple to make cashew cheese) after our oatmeal. We might eat this right after the oatmeal or a bit later for a snack before our lunch.

If you eat this type of food every morning (or sometime during your day; it doesn’t have to be breakfast) you will get an amazing array of plant diversity with great fiber, protein and other important nutrients to help you stay healthy and reduce your risk for chronic disease.

PS: If you can not find whole oat groats, steel cut oats is your next best alternative. These will have more fiber and nutrients than using rolled oats. We have not made steel cut ourselves, so please check google for cooking times for steel cut oats in the Instant Pot. Everything else can be the same as in our recipe above.
