Reebs' Riced Cauliflower
1 12oz bag frozen riced cauliflower
3/4 cup soy milk or any plant milk
2 tablespoons Well Your World NonFortified Nutritional Yeast
13 teaspoons Fiesta Fire Blend (I like a full tablespoon!)

This is the simplest thing to whip up. Just throw everything in a little saucepan and heat it up while stirring on mediumhigh heat for just a few minutes until the cauliflower is nice and tender. Of course you can also throw this in the microwave to heat it up as well. And if you want more starch, rather than lowcalorie cauliflower, try this with a package of frozen brown rice instead. I love to make a double batch with 1 rice and 1 cauliflower. I hope you love it!


Hoppin' John Salad
2 15oz cans black eyed peas (drained and rinsed, about 3 cups)
2 ribs celery (diced)
1 bell pepper (diced)
1 carrot (shredded or chopped small)
1/2 red onion (diced)
1/2 cup Well Your World Desert Catalina Salad Dressing (or more to taste)

We just throw the black eyed peas and veggies into a mixing bowl and toss it with the Desert Catalina dressing, adding it a bit at a time and mixing until everything is coated. It's delicious! If we're feeling really ambitious I will throw on some chopped cilantro to garnish. This is great over a bed of your favorite greens like chopped romaine lettuce or spinach. And if you like steamed greens like me, then you'll love this Hoppin' John Salad over some lightly steamed kale. Let me know what you think!


Polenta Surprise
1 cups polenta
4 cups water
1 tablespoon Italian Seasoning
2 tablespoons WYW Nooch
½1 jar WYW Marinara
1 can cannellini beans, drained and rinsed
1 bag chopped kale

The only thing you REALLY need to cook here is the polenta. Put the 4 cups of water into a saucepan on the stove and bring to a boil. Once boiling, carefully add in the polenta, stirring with a whisk to avoid clumping. Add the Italian Seasoning and Nooch, and stir really well. Lower the temperature and simmer until done.

In a separate pan, pour in the Marinara, beans, and kale. Heat until warmed or the kale is to your desired wiltiness. Serve the marinara mixture over the polenta.
