2. Preheat Oven at 125°C, grill steak (1.6kg, 3.5lb) for 90min
3. Rest for 60min
4. Preheat Oven at 250°C, grill steak (1.6kg, 3.5lb) for 2030min for Crust
1. 用 Black Pepper, Salt, Thyme, Paprika, Mexican Seasoning 醃牛扒然後放回雪櫃醃24小時
2. 預熱焗爐125°C慢焗90分鐘 (Garlic, Rosemary墊底) (讓牛扒中心溫度達至 48°C)
3. 將牛扒取出然後靜止60分鐘 (讓牛扒降溫並自己吸收翻肉汁)
4. 預熱焗爐250°C快焗牛扒2030分鐘 (讓牛扒表面香脆)
