Although the Mid Autumn festival has a cultural significance to me, as a girl from a Chinese family, it's really the mooncakes that always had me looking forward to it as a kid. I didn't get to eat a lot of snow skin mooncakes while growing up, but I've come to enjoy making them. I love how it allows more room for creativity compared to traditional baked mooncakes. It's much healthier as it requires less fat and is also easier to put together, relatively speaking. These mooncakes have a mochiesque texture as opposed to the cakey traditional mooncakes and they don't require baking. Whether you celebrate the Mid Autumn festival or now, give these a try as they are equally delicious!!

INGREDIENTS

(makes 24 50g mooncakes)

⇒ Snow skin

75g glutinous rice flour
75g rice flour
50g wheat starch (replaceable by cornstarch)
85g icing sugar
280g milk + reserved purple liquid
45g sweetened condensed milk
45g melted coconut oil (replaceable by flavourless oil or unsalted butter)

⇒ Filling

300g (4 small) peeled purple sweet potatoes
5g beet
145g water (add when blending, not when steaming)
100g sweetened condensed milk
45g coconut oil (replaceable by flavourless oil or unsalted butter)
110g coconut cream (replaceable by light cream)
40g wheat starch (replaceable by cornstarch)
Pinch of salt
