Today I made a very lovely mini tiramisu charlotte cake.
It tastes like strawberry, mango, chocolate and coffee.

The tiramisu cream that melts in your mouth is amazing on its own.
It's so lovely to decorate it with a ribbon as a finishing touch.

Because it is small in size, I think it is good for entertaining guests.
Strawberry, mango, and chocolate coffee are all so delicious.
You can also make it with just one flavor.

● Cake finished size
[10cm * 5.5cm (height) * 3 pieces ]

● Vanilla Biscuits
[Size: 25cm * 7cm *3pcs // 8cm (diameter) *6pcs]

3 yolks (50g)
20g sugar
3ml Vanilla extract

3 egg whites (105 g)
5g lemon juice
70g sugar

90g cake flour

Powderd sugar

● Special Mascarpone Cream
2 yolks
35g sugar
1/2 Lemon zest
5ml vanilla extract (Marsala, Kahlua, “Baileys” can be substituted)
25g water

4 g powdered gelatin
20g water

160g mascarpone
105g heavy cream
10g sugar

15g strawberry puree
15g mango puree

100g strawberry flavored milk
10g sugar (optional)

100g milk
15g mango powder

strawberry powder
mango powder
cocoa powder
deco white

● Coffee syrup
35g water
1.5g instant coffee
20g sugar (2Tbsp)
Amaretto liqueur 3ml

** Amaretto liqueur is a liqueur made using almonds.
It is a representative Italian liqueur made by slicing peeled almonds into thin slices and soaking them in alcohol.
It is famous for its unique sweet flavor and almond flavor. However, as time goes by, products are being made using various types of stone fruit seeds such as apricot seeds, peach seeds, etc.
It has a similar scent to almond extract, so it can be replaced when making cakes.
Adding amaretto will enhance the taste of tiramisu.
