Today I made a roll cake with green kiwi.
I made it with a relatively easy process.
Kiwi is a small but concentrated fruit full of nutrients.
It is a very good fruit for women, pregnant women, and growing children.
I made my own jam using sweet and sour kiwi and made a roll cake, and it was not too sweet and was very tasty.
I like a sour taste, so I added lemon juice.

● Cup measure standard
237ml = 1 cup
15ml = 1Tbsp
5ml=1tsp
1 egg (53 g without shell)
Heavy cream (38% milk fat)
(Chocolate is chopped, flour is before sifting)


● White Angel Roll Cake
(Mold size: 35cm*25cm)

20g milk (1Tbsp+1tsp)
20g vegetable oil (1Tbsp+ 1tsp)
1/4 tsp vanilla extract

85g cake flour (1/2 cup + 1Tbsp+1tsp)
1/2 tsp baking powder

6 egg whites (210 g)
10g Lemon juice
93 g sugar (1/3 cup + 1 Tbsp + 1 tsp)


● Green kiwi jam
210g green kiwi (45 pieces)
65g sugar (1/3 cup + 1 Tbsp)
7.5ml lemon juice (optional)
food coloring (optional)

● 30g heavy cream
50g heavy cream

● What about kiwi?
Kiwi fruit is a vine deciduous fruit tree of the Actiniaceae family.
In the 20th century, it was brought to New Zealand from China and improved to become the kiwi of today.
It is said that the name kiwi was given because the shape of the fruit is covered with brown fur and resembles a bird called 'kiwi' that lives in New Zealand.
'Gold kiwi' is a natural method of grafting new kiwi seeds onto green kiwi trees. There is also “Red Kiwi,” which has been improved by grafting figs.
Although kiwi is smaller than an apple, it is a nutritious fruit full of dietary fiber.
The reason kiwi has emerged as a key part of diet is because of its rich dietary fiber content.
The dietary fiber in kiwi is three times that of apples. Soluble dietary fiber, such as pectin, dissolves in the blood and has the effect of delaying the absorption of nutrients such as sugar and cholesterol. On the other hand, insoluble dietary fiber helps excrete waste products from the large intestine. It improves constipation, removes toxins accumulated in the body, and also contains ingredients that prevent the formation of age spots and blemishes.
There is more pectin, a soluble dietary fiber, in the skin of kiwi than in the flesh, but because of its rough texture, many people do not consume it.
Some people don't even know that they can be scared.
If you don't want to eat the skin, it's best to cut the kiwi in half and scrape off as much of the skin as possible.

Kiwi is also famous as a food with a very low GI (glycemic index) value of 35. In other words, the calories of one kiwi are about 50 to 70 kcal, similar to other fruits, but it has a low GI index and is absorbed slowly. A low glycemic index not only allows you to consume fat easily, but also accumulates less fat, which is good for weight control. In general, sour fruits raise blood sugar levels more slowly than sweet fruits.

Pregnant women usually take folic acid supplements from 4 weeks before conception to 13 weeks during pregnancy to prevent birth defects. New Zealand pregnant women are known to take gold kiwi, which is rich in folic acid, instead of taking folic acid supplements.
Kiwi juice contains actinidine, a proteindecomposing enzyme, which helps digest protein when eaten as a dessert after eating meat. Additionally, kiwi is low in sodium and very high in potassium, making it good for preventing high blood pressure.

In particular, kiwi has seeds in its flesh, so it can be said to be a very beneficial fruit for health. A ripe kiwi has small dark brown seeds arranged in concentric circles, and the seeds not only contain condensed 'energy of life' but also contain various nutrients.
