Simple Classic Mashed Potato Casserole!

Create comfort in minutes with our Simple Classic Mashed Potato Casserole recipe!

Ingredients:
* 1 kg Potatoes
* 3 tbsp Butter
* 1 cup Milk or cream
* Salt and pepper
* 3 Onions, thinly sliced
* 2 eggs
* Cheese (optional, for topping)

Instructions:
1. Peel and chop the potatoes into chunks.
2. Boil the potatoes in salted water until they are tender.
3. Drain the potatoes and return them to the pot.
4. Mash the potatoes with a potato masher or fork until smooth. Ensure they are well mixed and mashed for a creamy texture.
5. In a separate skillet, sauté the thinly sliced onions in butter until they are soft and caramelized.
6. Preheat the oven to 350°F (175°C).
7. Melt the butter for the puree but ensure it's not hot when adding it to the mashed potatoes.
8. Add butter, eggs and milk or cream to the mashed potatoes, and season with salt and pepper to taste. Mix well.
9. Grease the baking dish with butter before assembling the casserole.
10. Transfer half of the mashed potatoes to the greased baking dish, spreading them evenly to create a bottom layer.
11. Spread the caramelized onions evenly over the layer of mashed potatoes.
12. Top the onions with the remaining mashed potatoes, spreading them out to cover the onions completely.
13. Optionally, sprinkle cheese on top of the mashed potatoes.
14. Bake in the preheated oven for about 2025 minutes, or until the casserole is heated through and the top is golden brown. Ensure it's placed on the top layer of the oven for even baking.
15. Allow the casserole to cool slightly before cutting into portions.
16. Prepare a sour cream sauce using broth to accompany the casserole if desired.
17. Serve hot, and enjoy your classic mashed potato casserole layered with caramelized onions!

Sour Cream Sauce

Ingredients:
* 1 tbsp flour
* 1 tbsp butter
* 1/2 cup broth (chicken or vegetable)
* 1 cup sour cream
* Salt to taste
Instructions:
1. In a small saucepan, heat the oil over medium heat.
2. Add the flour to the hot oil and whisk continuously to form a smooth paste. Cook for 12 minutes, stirring constantly, until the flour begins to turn golden brown.
3. Slowly pour the broth into the saucepan while whisking constantly to prevent lumps from forming.
4. Whisk in the sour cream until well combined
5. Continue to cook the mixture, stirring constantly, until it thickens slightly and reaches a smooth consistency, about 35 minutes.
6. Remove the saucepan from the heat and let the mixture cool for a minute.
7. Season the sauce with salt to taste.
8. If the sauce is too thick, you can adjust the consistency by adding a little more broth or water.
9. Serve the sour cream sauce warm alongside the mashed potato casserole.
