The main ingredients of macarons are almond meal, sugar and egg whites. Use slightly aged egg whites. Cover the egg whites with plastic wrap and poke a few holes on the wrap. Chill in fridge for 23 days, the moisture in the egg whites will lose a little bit. Macarons made from unaged egg whites may result in cracked shells.

INGREDIENTS

Almond meal 60g
Icing sugar 60g
Egg white 45g
Caster sugar 40g
Cream of tartar ¼ tsp (1g)

Unsalted butter 50g
Icing sugar 30g
Lemon juice & lemon zest

** Preheat the oven to 150C/300F
** Bake at 150C/300F for 13 15 mins
