Matrix Negroni
· 37.5 ml (1.25 oz) Plymouth gin
· 30 ml (1 oz) homemade Blanco vermouth* or Lillet
· 7,5 ml (0.25 oz) dry vermouth
· 2 dashes grapefruit bitters
· 2 drops saline solution
Add all the ingredients into a mixing glass and stir well to chill and dilute. Pour over a large ice cube in an Old Fashioned glass. Express orange peel over the top and lay it down on top. Add one Red and one Blue pill.

Blue Pill
· 30ml (1oz) Suze
· 10 g sugar
· 0,3 g citric acid
· 5 g gelatin powder
· 3 drops saline solution
· blue food coloring (optional)
Put Suze and gelatine powder in a pan, mix it with a spoon and leave it to bloom for about 10 minutes. Then add everything else, stir and heat up so the sugar and acid dissolve. Don’t let it boil! When you have a hot clear liquid prepare a pipette and a mold on a small cutting board. Fill molds with the liquid and place in the freezer for a couple of hours or overnight. After that you should have nice firm Suze gummy candy.
Sugar and acid are there to balance gummy cany so it’s good on its own as well as with the drink. You can coat gummy candy with powdered sugar for easier handling.
Red Pill
· 30ml (1oz) Campari
· 10 g sugar
· 0,3 g citric acid
· 5 gelatine powder
· 3 drops saline solution
The process is the same as with the blue pill. In this case, you don’t need food coloring since you will end up with a red pill.
