做薑汁酒
薑蓉1/2湯匙
紹興酒1湯匙

雞醃料
薑汁酒1湯匙
老抽1/2湯匙
適量胡椒粉
糖1/2茶匙
鹽1/4茶匙
粟粉1 1/2湯匙

適量薑和蒜頭
臘腸1條

混合醬 :
蠔油1湯匙
生抽1湯匙
紅糖1/2湯匙
適量胡椒粉
粟粉1茶匙

Braised fish maw w/ mushrooms & chicken recipe :
10 shiitake mushrooms
Marinade mushroom
1/2 Tbsp soy sauce
1/2 tsp sugar
Some whiter pepper
1 Tbsp oil
(Stir well)
2 Tbsp mushroom water
1 oz(29g)baked fish maw
Some ginger & shallot
1 Tbsp cooking wine

2 lb(900g)chicken
Make ginger wine
1/2 Tbsp minced ginger
1 Tbsp cooking wine

Marinade chicken
1 Tbsp ginger wine
1/2 Tbsp dark soy sauce
Some white pepper
1/2 tsp sugar
1/4 tsp salt
1 1/2 Tbsp cornstarch

Some ginger & garlic
1 Chinese sausage

Sauce mix
1 Tbsp oyster sauce
1 Tbsp soy sauce
1/2 Tbsp brown sugar
Some white pepper
1 tsp cornstarch
2 Tbsp water
