酥脆蒜片煎雞扒

材料
急凍雞扒2塊
蒜頭1大個
黑椒汁
麪粉5湯匙

處理
1. 雞扒清水解凍。
2. 雞扒倒去水分用粗鹽1茶匙乸5分鐘去除雪味、腥味及加入少許鹹味清水洗乾淨。
3. 雞扒1開2再輕手切4刀使它們容易煎熟及不會收縮放入大碗內加入調味料
a. 鹽1茶匙撈勻。
b. 胡椒粉2茶匙撈勻。
4. 蒜頭去皮切片。

烹調
1. 大火在鑊內燒熱油3湯匙。
2. 轉慢火炸蒜片。
3. 蒜片已炸至金黃色放上碟攤凍。
4. 預備黑椒芡汁
a. 黑椒醬1湯匙
b. 糖1湯匙
加入清水250毫升加入生粉1湯匙攪勻。
5. 預備透明保鮮袋。
6. 放雞扒入保鮮袋加入適量麪粉封口搖勻。
7. 慢火燒熱油放雞扒落鑊皮向下中慢火煎冚蓋煎7至8分鐘。
8. 雞扒大約煎了6分鐘一面已轉金黃色反轉另一面繼續煎冚蓋煎5分鐘。
9. 雞扒已煎熟放上砧板倒起油入碗內。
10. 黑椒芡汁大火煮滾煮至稠厚倒入細碗內。
11. 雞扒切件放上碟灑上蒜片。
12. 完成 可享用。

Pan~fried crispy chicken steak with garlics

Ingredients:
Frozen chicken steak 2 Nos.
Garlics a big one
Black pepper sauce
Rice flour 5 tbsp

Preparation:
1. Chicken steak, defrost in tap water.
2. The chicken, pour away water. Season with 1 tsp of cooking salt for 5 minutes, to remove unpleasant smells and add some salty taste to it. Rinse thoroughly.
3. The chicken, divide it into 2 shares. Make 4 slight cuts on each share to make it easy to cook well and retain in good shape. Put in a big bowl. Add seasoning:
a. Salt 1 tsp, mix well.
b. Pepper 2 tsp, mix well.
4. Garlics, get them peeled and sliced.

Steps:
1. Heat up 3 tbsp of oil at high flame in wok.
2. Turn to low flame, deep fry the garlics.
3. Garlics have been deep fried into golden yellow, put on plate. Wait for cooling down.
4. Prepare black pepper sauce:
a. Black pepper sauce 1 tbsp
b. Sugar 1 tbsp
Add in 250ml of water. Add in 1 tbsp of tapioca starch, mix well.
5. Get ready for a double lock bag.
6. Put chicken in the bag. Add in appropriate amount of rice flour. Get it sealed and shaked well.
7. Heat up oil at low flame. Put chicken in wok and skin faces down. Fry at medium~low flame. Cover up the wok. Fry for 7~8 minutes.
8. The chicken, has been fried for about 6 minutes, one side has been turned into golden yellow, flip over and continue frying. Cover up the wok and fry for 5 minutes.
9. The chicken has been fried well, put on chopping board. Pour the oil into a bowl.
10. Black pepper sauce, heat up at high flame until it turns thick. Pour into a seasoning bowl.
11. Chicken steak, cut into pieces. Put on plate. Put sliced garlics on top.
12. Complete. Serve.
