Some recipes from the video:
PB JELLY BAKED OATS:
1 very ripe banana
½ cup oat flour
¾ cup plant milk: use oat for sweeter or soy for higher protein
1 tsp ground flaxseeds
1 tsp baking powder
1 tsp cinnamon
2 tbsp natural peanut butter
1 scoop optional protein powder (I used unflavoured, vanilla would work really well here tbh)
½ cup frozen or fresh raspberries
optional few round of bananas to top
Bake at 180C for 2530 min
.
Lemony & garlic pasta:
34 cloves minced garlic
½ lemon’s juice plus 1 lemon’s zest
1 red onion, finely chopped
big handful of fresh parsley, chopped
few fresh basil leaves
¼ cup nutritional yeast
1 can coconut milk, full fat, 400ml
1 tsp soy sauce
Spaghetti pasta, cooked as package instructions save some pasta water

Sauté the onions, garlic in a pan with olive oil. Add some garlic powder, salt, pepper and pasta water once the onions are sautéed but not burnt. Then add the lemon’s zest, coconut milk, nutritional yeast, soy sauce and parsley. Let it simmer for 5 minutes on medium heat before adding the pasta. Mix well and turn the heat off. Once it is not boiling hot anymore, stir in the lemon’s juice.

For the topping:
1 block of firm tofu, shredded
olive oil to fry
1 tbsp or so soy sauce

Fry in a pan until crispy!

Choc. Brownie
2 cups allpurpose flour
1cup whole grain
2 tbsp corn flour
pinch of salt
1 tsp baking powder
1/4 cup cocoa powder, unsweetened
1 pinch salt
1/3 cup choc chips
Mix well in a large bowl.

In a separate bowl:
1dl oil, use a neutral tasting, I used sunflower
3dl oat milk
1 tsp vanilla extract
1cup brown sugar
100g melted dark vegan choc (or your favourite vegan chocolate, the darker it is, the more rich the cake becomes)
Let this set for 5min so the chocolate can cool down
Bake @180C for 2530min

Mix well then combine with the dry ingredients till mixed well. Don't overmix it.
In a parchment lined baking sheet, spread the batter evenly, then bake it in the oven at 180°Celsius for around 2530min til a toothpick comes out clean from the middle

Wait at least 30 min before cutting so the cake can set and cool down

Blended overnight oats:
1 tbsp unsweetened cocoa powder
1 scoop vegan protein powder
1 tsp maca powder
½ cup oat flour
¾ cup oat milk
2 tbsp chia seeds
caramelised bananas, berries, coconut yog, walnuts, pb

Tofu Marinate:
soy sauce, rice vinegar, olive oil, chilli flakes, agave syrup
.
Cashew “cheese sauce”:
150g cashews
¼ cup coconut yog
salt + pepper
¼ cup nutritional yeast
1 tsp curry powder
1 tsp smoked paprika
1 tsp garlic powder
1 tsp soy sauce
¼ cup coconut milk
.
Bean Stew
1 bunch of spring onion
3 cloves garlic
1 onion
big handful fresh parsley
handful of cherry tom
500g canned white beans
salt n pepper
1 tsp curry powder
1 tsp garlic powder
¼ cup nutritional yeast
400ml coconut milk
leftover cashew sauce& studying

Matcha pancakes:
½ cup oat flour
2 tsp matcha powder, sifted
2 tbsp peanut butter
1 tsp baking powder
1 tsp ground flaxseeds
1 tsp cinnamon
1 ripe banana
¾ cup oat milk
1 scoop vegan protein powder
