Today, I made a soft souffle cheesecake with the last recipe video. ^^

Japanese style Soufflé Cheesecake has an impressive fluffy and light texture and taste.
But, It's a bit difficult to bake to get a perfect shape.
If you follow the method in this video, you will be able to make a tall, cloudlike souffle cheesecake.
Bake for 30 minutes in an oven preheated to 150℃.
Then open the oven door for 10 seconds to release steam.
If the pressure in the oven is lowered by removing the steam,
the cake swells stable and the top is prevented from cracking.
Then lower the temperature to 110℃ and bake for another 30 minutes.
Every 10 to 15 minutes while baking, you can slightly open the oven door and release steam one or two times.
Then, after 30 minutes, increase the temperature to 150 degrees and bake for another 4 to 5 minutes to give the top a golden brown color. Be careful, the top may burst if you bake it longer.

If you're using a convection oven(fanforced oven), it's probably hard to bake light cakes like this one.
Then, try my convection oven solution.
Among my videos, there is the Taiwanese Castella video, which is for convection oven users.
That will be very helpful because the method is similar to souffle cheesecake.

40g cake flour
15g sugar

130g cream cheese
40g butter
50g milk
3 egg yolks
10g lemon juice

3 egg whites (measure 100g)
55g sugar
