Be sure to prepare the sweet stiff starter about 12hrs BEFORE starting the dough. Mix all of the starter ingredients until fully combined. Cover and let it rise until peak, and mix the dough when the starter has reached peak.
Sweet stiff starter
50g 100% hydration unfed sourdough starter
66g water
120g flour
20g sugar
Dough
480g flour
95g water
80g sugar
9g salt
All stiff starter
4 eggs
50g neutral oil (I used avocado oil), to be added in increments
This recipe makes 18 challah buns OR two challah crowns OR two babkas.
For challah crowns bake for 3040mins or until internal temp is 195F.
For babka bake for 4060mins or until internal temp is 195F.
