This is the second episode of my modern day version of poor man's meals. I'm making 2 low cost frugal meals to help you get by when you don't have enough money for food. These extreme budget meals will feed a family of four and are in the $2$4 range. If you have a higher budget you can add on to these meals. I'm also making some healthy 2 ingredient cookies that are a great breakfast item and can be made for .74.

Ingredients and prices
LENTIL SLOPPY JOES
1 cup lentils = .67 for half of Walmart Great Value bag of lentils
Tomato sauce .44 (Great Value Walmart brand)
Buns = $1.38 )Great Value Walmart brand)
TOTAL $2.49
*I found a cheaper price on lentils elsewhere but am using the Walmart price
INGREDIENTS
1 cup lentils
1/2 tsp garlic
1 tsp onion powder
1/2 tsp cumin
½ tsp chili powder
1 tsp garlic powder
1 tbsp brown sugar – to tasteadd more if you want it sweeter
1 tsp low sodium soy sauce
1 ½ tbs oil
1 tsp vinegar – I used balsamic but any will work
Rinse and clean lentils. Boil lentils 15 minutes then add 3/4 tsp salt. When tender , drain and set aside.
Add oil to pan, add all spices then tomato sauce, soy sauce, vinegar and sugar. Taste and see if you want more sugar added. Taste for acidity level. Add more vinegar if you want more acidity. When seasoned to your liking, add drained lentils and stir together.
I used oil to baste top of bun. Set in toaster oven to lightly brown and then assemble your sloppy Joe.
I tried with chopped jalapeno, cilantro, relish and lettuce and liked them all but think this would be best with dill pickle slices.
Spanish One Pot Meal
1 box Rice a Roni Spanish
1 can diced tomatoes
1 can black beans
1 small can chicken breast
Make Spanish rice according to box instructions when almost finished add in black beans and chicken breast.

Bake in a casserole and top with cheese
Use for stuffed peppers
Use in burritos
2 INGREDIENT OATMEAL COOKIES
1 cup oatmeal
2 bananas
optional spices = cinnamon, pumpkin spice, etc.
optional add ins, almonds, walnuts, cranberries, raisins, cacao powder, chopped figs, shredded coconut, peanut butter
Bake for 1720 minutes at 375
