In today's video, my goal is to save money on the weekly grocery budget while still including some delicious chicken recipes along with healthy fresh vegetables. I'm using lots of fresh herbs and finding new ways to use common food items. Join me in this extreme grocery budget challenge to discover healthy and delicious meals for a tight budget.

BREAKFASTS

Oatmeal Bars 10 servings
3 bananas
3 hardboiled eggs
2 small kale breakfast burritos with 3 eggs total

LUNCH

2 Servings lentil soup with green salad with thousand island dressing, tomatoes, carrots
1 huge salad with 2 eggs, grilled chicken and veggies (shredded carrots, cabbage, tomatoes, avocado)
2 buddha bowls 1 with grilled chicken, 1 without. Includes rice, cabbage, shredded carrots, fresh mint, cilantro, corn,

2 stir fry with brown rice, celery, carrots, and cabbage
1 Serving capellini pomodoro with capers and fresh Italian parsley on top

DINNERS

2 servings lentil soups
2 servings honey garlic chicken with rice
2 servings chicken piccata
1 serving capellini pomodoro
1 egg
celery
cabbage

Food Leftover

Rice half of 1 lb bag
Lentils half bag
cappelini half
eggs
flour tortillas 5

RECIPES

Honey Barbecue Chicken

2 Chicken thighs and 2 drumsticks
1/4 c. lowsodium soy sauce
3 tbsp. honey
1 1/2 tablespoons apple cider vinegar (or rice wine vinegar if you have it. Lemon also works)
2 cloves garlic, minced
salt and pepper

Brown chicken in skillet
Transfer to crockpot and cover with ingredients. Cook on low for 3 4 hours or until done. If you need to add more liquid to the pot, add a small amount of chicken stock.


I loosely follow recipes and use what I have on hand, but these recipes were inspired from these places.

OATMEAL BARS

2 cups instant oatmeal mix I used pumpkin spice You can use regular oatmeal, but add sugar to the mix
3 eggs ( 2 will work)
2 1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1 teaspoon vanilla
1/4 1/2 c water to desired consistancy
1/2 teaspoon salt
2 tablespoons melted butter or margarine

bake or fry in pan.
