炸醬麪

材料
免治豬肉300克
蝦米50克
生麪1個

處理
1. 蝦米清水浸5分鐘。
2. 炸醬做法
a. 鑊中用中火燒熱2湯匙油。
b. 爆香豬肉。
c. 加入紹興酒1湯匙爆香。
d. 加入少許胡椒粉轉中慢火。
e. 加入豆瓣醬1湯匙。
f. 加入沙茶醬1湯匙。
g. 加入生抽1湯匙。
h. 加入麻油1茶匙。
i. 加入糖1湯匙。
j. 加入鹽少許。
轉大火炒勻。
k. 加入蝦米。
l. 加入清水200毫升。
m. 滾起後轉中慢火炆3分鐘。
n. 炆了3分鐘 熄火
3. 另一邊煲滾一煲水放生麪煮至軟身。
4. 炸醬已炆至收汁放上碟。
5. 生麪已煮好上碟完成。

Noodles with soy bean paste:

Ingredients:
Minced pork meat 300g
Dried sea shrimps 50g
Instant noodle 1 No.

Steps:
1. Dried sea shrimps, soak in tap water for 5 minutes.
2. Preparation of soy bean paste:
a. Heat up oil 2 tbsp at medium flame in wok.
b. Fry the pork well.
c. Fry well with Shaoxing wine 1 tbsp.
d. Turn to medium~low flame after adding the pepper.
e. Add chili bean sauce 1 tbsp.
f. Add sa cha sauce 1 tbsp
g. Add light soya sauce 1 tbsp.
h. Add sesame oil 1 top.
i. Add sugar 1 tbsp.
j. Add salt little.
Turn to high flame. Fry well.
k. Add dried sea shrimps.
l. Add water 200ml.
m. Turn to medium~low flame, then braise for 3 minutes.
n. Have already braised for 3 minutes. Turn off fire.
3. Boil up a pot of water on the other side. Cook the instant noodles until it becomes soft.
4. The meat sauce has been become thick. Put in a plate.
5. Instant has been cooked well. Serve.

2. 沙茶醬同沙嗲醬係唔同嘅
做炸醬就最好落沙茶醬

3. 炸醬撈麵.最好就用生麵
記得滾水先好落麵
麵一散開就OK啦
