Inspired from the Mango Bubble Tea, this Mango Boba Drink has homemade Mango Boba Pearls that can be made with ingredients you have at home Mangoes & Tapioca Starch. If you do not have tapioca starch for the mango boba pearls, you can easily make it at home with tapioca pearls milled in a grinder.
The Mango Boba Recipe has just 3 simple steps: Make the Mango Boba, make the Mango milk and serve!
The Mango Boba Pearls have a slight chewy texture that is delightful and adds all the zing and zest to the Mango Boba Drink!
You can make and store the Mango Boba Pearls in the refrigerator for a few days and enjoy the mango Boba drink whenever you want!

Recipe:
Mango Boba Drink
Preparation Time: 25 minutes
Cooking Time: 45 minutes
Serves: 23

Ingredients:
For the Mango Boba Pearls:
1 cup mango puree
2 cups tapioca starch
2 tsp sugar
1 cup sugar syrup
For the Mango Milk:
¼ cup mango puree
2 cups milk
2 tbsp sugar
Ice as required

Method:
In a large bowl, mix together, half the tapioca starch with the mango puree, powdered sugar and start to mix. Add more tapioca starch as required to bring together to a smooth non sticky dough.
Break the dough into tiny balls and roll out smooth balls.
Bring to boil 6 cups of water and add the mango boba pearls. Cook the mango boba peals for45 minutes or till they begin to float on the water. Remove from heat. Drain and refresh in cold water immediately.
Keep the mango boba pearls in sugar syrup to prevent sticking.
Blend together the remaining mango puree, sugar and milk to make the mango milk.
Add ½ cup boba pearls to a glass, top with ice and pour in the mango milk. Serve.
