Recipe :

Hyderabadi Tomato Kachumber Chutney
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serve: 34

Ingredients:
8 Tomatoes
2 tbsp Cooking Oil
1 tsp Cumin Seeds
1/2 tsp Mustard Seeds
2 tbsp Chopped Garlic
8 to 10 Curry Leaves
1 medium sized Onion
1 medium sized Green Cucumber
1 tsp Chopped Green Chilies
1 tsp Chili Flakes
1 tsp Crushed Roasted Cumin Seeds
1/4 tsp Black Salt
Salt to taste
2 tbsp Chopped Mint Leaves
2 tbsp Chopped Coriander Leaves
2 tsp Lemon Juice



Rajasthani Chili Garlic Tomato Chutney
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serve: 34

Ingredients:
2 bulbs garlic , peeled and roughly chopped
8 red chili peppers , roughly chopped
1 medium tomatoes , roughly chopped
1/2 tsp cumin seeds
salt , to taste
3 tbsp oil
2 tsp kashmiri red chili powder
1/2 tsp turmeric powder
1 cup water

Method:
Coarsely grind your garlic, red chili peppers, tomatoes, cumin seeds and salt using a mortar and pestle, or use a grinder with 2 tbsp water.
Heat some oil in a heavybottom saucepan on medium heat. Add in your chutney paste, Kashmiri red chili powder and turmeric powder. Saute for 2 to 3 minutes.
Add water and cook covered on medium to low heat while stirring occasionally till the oil separates. Cooking it thoroughly will increase the shelf life of the garlic chutney.
Your Garlic Chutney is ready!

Bengali Sweet Tomato Chutney
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serve: 34

Ingredients:
8 ripe red tomatoes
2 tbsp oil
½ tsp nigella seeds
½ teaspoon fennel seeds
½ tsp mustard seeds
2 dry red chili
salt as per taste
6 tablespoons sugar
2 fresh green chilies

Method:
Coarsely dice the tomatoes.
Heat oil in a pan.
Add all the seeds and the dry red chili. Let the spices sizzle up for a few seconds and then, add the tomatoes.
Sprinkle salt, give it a stir. Cover the pan and let it cook for 5 minutes or until the tomatoes are softened and almost cooked through.
Add the sugar and mix well. Cook for 34 minutes till the chutney acquires a glaze look.
Remove from heat, cool completely and store in the refrigerator for up to. Week.
