One vegetable that many don’t enjoy is the humble lauki ki sabji.
The lauki ki sabji often sidelined for being too boring and tasteless. But no longer!
Wait till you try my version of the lauki ki sabji. The bottle gourd or lauki is cut into s=discs, batter coated, fried and then added to the gravy.

Lauki ki Sabji
Preparation time: 20 minutes
Cooking Time: 30 minutes
Serves: 34

Ingredients:
600 700g Lauki / Doodhi / Ghia / Bottle Gourd
1 tsp red chili powder
½ tsp turmeric powder
Salt to taste
1 tbsp ginger garlic paste
1 tsp garam masala powder
½ cup besan
½ cup rice flour
Oil to fry
1 tsp red chili powder
½ tsp turmeric powder
Salt to taste
1 tsp chopped ginger
1 tsp chopped green chilies
1 tsp chopped garlic
1 tsp garam masala powder
½ cup yoghurt
1 tsp kasuri methi

Method:
Peel and cut the bottle gourd into 1” thick roundels. Wash well and pat dry.
Mix together the ginger garlic paste, red chili powder, 1/2 tsp turmeric powder, garam masala powder and mix well. Rub well over the lauki slices.
Mix together eh rice flour and besa, dry coat the lauki slices in the besan mixture and pat well. Deep fry till golden brown.
Heat 3 tbsp oil in a pan. Add the bay leaves, cardamoms, cinnamon, cloves, and cumin seeds. Allow to splutter. Add in the chopped onions and sauté till golden.
Add red chili powder, coriander powder, turmeric powder and mix well. Add the chopped onions and sauté till golden. Add powdered spices, mix well. Add tomatoes and cook till the tomatoes are soft and pulpy.
Add 1 cup water, 1/2 cup whisked yoghurt and mix well. Bring to a boil. Simmer for a few minutes. Add salt to taste.
Add the fried lauki and simmer for 2 minutes. Remove from heat. Add kasuri methi and mix well serve.
