This Lehsuni Palak Khichdi Palak Khichdi Recipe is not just a boiled dal & rice gruel but a masala khichdi with the added taste of spinach.
This Lehsuni Palak Khichdi Recipe gets two tempering for the taste. The first tempering for the Lehsuni Palak Khichdi is an onion tomato tempering in which the blanched spinach puree is cooked.
The second tempering for the Lehsuni Palak Khichdi Recipe is with chili & garlic !

Recipe :

Lehsuni Palak Khichdi
Ingredients:
For spinach puree:
500g spinach
1 bunch coriander leaves
1 handful of mint leaves
2 3 green chilies
2” ginger
For Khichdi:
1 cup yellow moong dal
1 cup rice
½ tsp turmeric powder
Salt to taste
4 cups water
For the 1st tempering:
2 tbsp ghee
2 tbsp oil
1 tsp red chili powder
1 tsp cumin powder
1 tsp garam masala powder
Salt to taste
½ cup chopped onions
1 cup chopped tomatoes
2 tbsp chopped garlic
2nd tempering:
2 tbsp ghee
2 tbsp sliced garlic
45 broken red chilies

Method:
Wash and soak the rice and dal for 30 minutes. Drain the water .
Pressure cook the dal & rice with 1 tsp salt, turmeric powder and 4 cups water for 1 whistle.
Remove the spinach leaves.
Blanch the spinach leaves in boiling water for 2 minutes and refresh in cold water.
Puree the spinach with coriander leaves, mint leaves, green chilies & ginger.
Heat the ghee and oil. Add the cumin seeds and then the garlic. Sauté till golden. Add the chopped onions and sauté till golden.
Add the powdered spices and the chopped tomatoes and cook till oil floats on top. Add the pureed spinach and cook till for 45 minutes. Add the cooked khichdi and mix well.
Cook further for 34 minutes.
Heat ghee in a pan. Add the sliced garlic and sauté till golden. Add the broken red chilis. As the chilies are fragrant, pour over the khichdi and serve.
