Parkia Speciosa, is the official scientific name, but you’ll also hear them called stink beans, bitter beans, petai (Malay), สะตภ(sataw in Thai), and a variety of other names. I prefer to call them stink beans because even though I don’t think they really stink in any way, that makes a statement that makes them stand out, and you know they are not just your average veggie. #stinkbeans #Thailand #plantbased
Nakhon Si Thammarat, Southern Thailand Stink beans are popular to eat throughout Southeast Asia, especially Southern Thailand, Malaysia, and Indonesia, and they are often eaten raw, pickled and preserved, or most commonly cooked with something spicy, like chili sambal or curry paste.
After we harvested some fresh stink beans it was my first time, and it was awesome we then headed back to the house and Aunty got started cooking. I asked her to make a completely plant based Thai curry, so she included some on hand vegetables from the garden including luffa, eggplant, and a heap load of insanely spicy chilies. This entirely plant based / vegan / vegetarian Thai food curry was packed with flavor, and Big On Spice!
