Homemade Phoenix Egg Rolls Recipe - 香脆鳳凰卷 (花生/ 椰絲口味) ~ 簡單做法

Phoenix Rolls is a spin off of the Crunchy Egg rolls with delicious fillings. The more popular filling being sweet coconut and sesame filling is usually what you’ll get from the store bought version. I specially created the peanut filling recipe which packs the phoenix rolls with an added punch of flavor. Ingredients are very simple and only takes a brief moment to make. Ingredients:
3 large eggs
152 g white granulated sugar
150 g AllPurpose Flour
39 g tapioca starch
1 tablespoon custard powder
1 teaspoon baking powder
½ teaspoon baking soda
116 g unsalted butter, melted

Peanut Filling Ingredients:
5 Tbsp of Roasted Peanuts, finely ground (87 g)
3 Tbsp of white granulated Sugar

Coconut Filling Ingredients:
5 Tbsp of Sweetened Coconut Flakes
3 Tbsp of White Granulated Sugar
1 Tbsp Toasted Sesame Seeds

材料:
雞蛋 3 個
砂糖 152 克
中筋麵粉 150 克
生粉/太白粉 39 克
吉士粉 1 湯匙
泡打粉 (發粉) 1 茶匙
梳打粉 1/2 茶匙
無鹽牛油 (溶解) 116 克

花生餡材料:
攪碎花生 5湯匙
白糖 3 湯匙

椰蓉餡材料:
椰蓉 5 湯匙
白糖 3 湯匙
烤芝麻 1 湯匙
