Tonight it will be a classic Amish macaroni salad. I have been working on this one for a number of years and have just recently got it right. Rick always prefers a sweeter macaroni salad with a bit of vinegar. The only type I ever grew up with had simply macaroni, egg, salt pepper and mayo. That is how my Mom liked it and so that is how it was always made. She would often throw in some chopped celery, but that was it.

Mine has a variety of veggies, chopped very fine and a dressing that starts with mayo but also has cider vinegar, sugar and other spices. It all turns out so yummy that we love it.

This reminds me of the macaroni salad that you can often buy at the deli, only this one does not have too much vinegar and as a result does not leave a horrible bitter aftertaste when you eat it.
