Chop Suey is an “odds and ends” stirfry of whatever meat and vegetables you have available in the fridge, invented in the early days of Chinese American cuisine! The Cantonese term is zaap sui which was Americanized into "Chop Suey". This dish has fallen a bit out of vogue but it couldn't be easier to make at home, and as we rediscovered, it's satisfying, healthy, and delicious!
