Jelly cheesecake ingredients:
6 inch cake pan with removable bottom.
Graham crackers: 60 g
Melted butter: 25 g
Homemade cream cheese: 375 g
Or store bought cream cheese: 300 g + sour cream 75 g
Sugar: 100 g, 1/2 cup
Vanilla paste: 5 g, 1 teaspoon
Egg: 1
Heavy cream: 100 g, 1/3cup + 1 tablespoon
Corn starch: 10 g, 1 tablespoon

Steps:
1. Blend crackers and butter. Put it in the baking pan, and bake for 5 minutes at 350°F /175°C. Then cool it to the room temperature.
2. Return the cream cheese to the room temperature, then add sugar and vanilla paste. Mix.
3. Add the egg, heavy cream and corn starch. Mix.
4. Pour it into the baking pan.
5. Water bath bake it at 350°F /175°C for 25 minutes first.
6. Then reduce the temperature to 300°F /150°C bake for 45 minutes.
7. Turn off the oventake the cake out after 1 hour.
8. Decorate with grapefruit and lemon jelly.
