Ingredients (Diana Aw)
1. Sweet potatoes 2pcs, wash and remove skin, then cut into thick strips. Soak in water to remove the starch.
2. Potato starch
3. Sour plum powder

Method
1. Boil a wok of water and add in little salt followed by the sweet potatoes. Bring to boil for 1min and drain. Set aside.
2. Place the sweet potatoes in a container. Add a handful of potato starch and mix well. Wait for a min then add another handful of potato starch and mix again. Repeat again the third time.
3. Heat wok with more oil. Deep fry the sweet potatoes by adding few pieces at a time. Turn to medium low heat and fry for 57min. Once the sweet potatoes are floated up, it’s almost ready.
4. Turn to high heat and fry for another 20sec.
5. Sprinkle some sour plum powder
6. Serve and enjoy!
