中秋节快到了想吃月饼却不要等3天回油吗推荐你做冰皮月饼。做法直接是个免烤箱食谱。食谱分量要拿捏的准可以作出外皮口感软糯又不粘牙馅料稳固又不干硬的冰皮月饼。今天用了天然蔬果粉和抹茶粉制作了4种不同的粉色系列天然好梦幻。揉面到位冷冻后冰皮切开稳固撕开还有拉丝效果。内馅不太干不太湿冷冻后口感刚好奶香味刚好香而不过于甜腻。
冰皮月饼像其名一样是个冰皮所以没有烤过全程用蒸淀粉的方式制作。作好建议放冰库冷冻最好保持原来软糯度。糯米粉帮助口感软糯粘米粉帮助顺滑不粘牙澄粉帮助晶莹通透 所以一个不可少。

收藏方式做好收密封容器放冰库冷冻12小时后立刻吃口感最佳。要保存更久收冰库冷冻吃前解冻保持柔糯度。要新鲜建议7天内吃完。

MidAutumn Festival is around the corner. Wish to eat mooncake but don’t wanna wait 3 days to return oil? Recommend you to make Snowy Mooncakes. The method is straightforward, no bake recipe. With accurate ratio recipe, you can make snowy mooncakes with soft, glutinous yet nonsticky texture, and solid yet not hard fillings. Today, I used natural fruit vegetable powder and matcha powder to make 4 different pastel color series, so natural and dreamy. When snowskin is kneaded just right, can be cut steadily after freezing, even with stringpull effect when pull apart. The filling is cooked not too dry not too wet, texture is just right after freezing, the milk flavor just right, fragrant but not too sweet.
Snowy Mooncake has snow skin as its name suggests, so it’s not baked, made by steaming starch throughout the process. Thus, recommended to store in freezer to keep the original softness and glutinous. Glutinous rice flour gives soft glutinous texture; rice flour gives smoothness and nonstickiness; Wheat Starch gives crystal translucent appearance, so none is dispensable.

Storage method: Put in airtight container, freeze for 12 hours, and serve immediately for the best taste. To keep it longer, freeze in the freezer and thaw before eating to keep original softness and glutinous. For freshness, suggest finish eating within 7days.

0.5克 盐
120克 牛奶室温
3颗 大鸡蛋
60克 细纱糖
50克无盐牛油 (融化放凉)
(全程炒馅910分钟)

=冰皮 (10份3738克/份)=
50克 糯米粉
50克 粘米粉
30克澄粉
30克糖粉
1克 盐
186克 牛奶室温
25克 炼奶
30克 植物油
少许甜菜根粉紫薯粉抹茶粉可选
(水沸腾后中大火蒸25分钟)
(月饼作好冰库冷冻12小时)

=Custard Paste Fillings (10pcs, 40g/pc)=
30g Milk Powder
30g Low Protein Flour/Cake Flour
30g Wheat Starch
0.5g Salt
120g Milk (room temperature)
3 Large Eggs
60g Caster Sugar
50g Unsalted Butter (melted, cooled)
(Total StirFried fillings for 910 minutes)

=Snow Skin (10pcs, 3738g/pc)=
50g Glutinous Rice Flour
50g Rice Flour
30g Wheat Starch
30g Icing Sugar
1g salt
186g Milk (room temperature)
25g Condensed Milk
30g Vegetable Oil
Tiny pinch of Beetroot Powder, Purple Potato Powder, Matcha powder (optional)
(After water boiled, steam on mediumhigh heat for 25 minutes)
(Once mooncakes are done, freeze in the freezer for 12 hours)
