Clabbered milk is milk that has been allowed to naturally sour and thicken by the action of lactic acid bacteria. This process is sometimes referred to as "clabbering" or "souring" the milk. Keep in mind that you can only use raw/unpasteurized milk for this process as it has live bacteria.
