Day 45 recipes

BREAKFAST: STEEL CUT S’MORES OATMEAL
Ingredients
2 cups milk of choice
2 cups water
1 cup steel cut oats
1 teaspoon vanilla
Marshmallows, chocolate chips and graham crackers, amounts vary
Sweetener of choice, optional

Directions
Into a pot, add the milk and water and let it come to a soft boil, add the oats and give it a stir. Let it come to a boil and reduce heat to low. Cook for about 30 minutes, stirring occasionally to avoid clumping. If it gets too thick, add more water, about ¼ cup at a time. Remove from heat and add 1 teaspoon vanilla extract.

Add the oatmeal into serving bowls, then add your marshmallows on top, mini marshmallows work better. Put in the microwave for about 2030 seconds until softens. Then sprinkle with chocolate chips and crushed graham crackers. Add more sweetener if you like.


SMOOTHIES: BLACKBERRY PINEAPPLE SPINACH
Into a blender add 1 mandarin orange, ¾ cup frozen pineapple, ¾ cup frozen blackberries, 1 frozen banana, a handful of spinach and about ¼ cup milk (or more depending on the consistency you prefer). Blend until smooth.

LUNCH: THAI CHICKEN AND BBQ CHICKEN FLATBREADS
THAI CHICKEN
Peanut Sauce (Recipe: https://www.food.com/recipe/californi...)
Flatbread (I used Stonefire brand)
Mozzarella cheese, about 1 cup
Cooked chicken, sliced thinly
¼ cup shredded carrots
¼ cup green pepper, sliced thinly
Sliced red onion
Green onion and crushed peanuts for garnish

To assemble: spread about 1/3 cup of the peanut sauce on top of the flatbread, then add the cheese, chicken, shredded carrots, green pepper and sliced red onion. Sprinkle a little bit more cheese on top then bake for 10 minutes or until the cheese has melted at 425F. Garnish with green onion, crushed peanuts and a drizzle of the peanut sauce.

BBQ CHICKEN
BBQ sauce of choice (I used Seet Baby Ray’s), about ¼ cup or to taste
Flatbread
Mozzarella cheese, about 1 cup
Bacon slices, optional
Cooked chicken, sliced thinly
Red onion, sliced thinly
Cilantro, for garnish

To assemble: spread some BBQ sauce, then the cheese, bacon (if using), chicken, red onion and a bit more cheese on top. Bake for 10 minutes or until the cheese has melted at 425F. Garnish with cilantro and a drizzle of BBQ sauce.

DINNER: ORANGE SHRIMP

Ingredients:
2 lbs. shrimp peeled and deveined. Season with a sprinkle of salt, ginger powder, garlic powder and black pepper. Set aside while you prep the sauce.
Sauce:
1 orange, skin peeled and cut into strips, then juice the orange (mine yields ¾ cup of orange juice)
¾ cup chicken broth
3 tablespoons white vinegar
½ cup brown sugar
¼ cup soy sauce
6 cloves garlic, minced
1 tablespoon grated ginger
1 teaspoon cornstarch

Stir together and set aside.

Whisk 3 egg whites and toss it with the shrimp. Into a bowl, add about 1 cup of rice flour, you can use allpurpose flour but I find that rice flour produces crispier texture. Add just a small pinch of salt into the flour, then take the shrimp and add into the flour. Dust off excess flour and fry for 34 minutes on each side, I use peanut oil for frying. You may need to do this in several batches. Remove from the pan and set aside. Into a wok, add a little bit of oil and add the orange strips, cook for about 30 seconds to release the citrus oil. Then add the rest of the sauce, cook until thickened for about 57 minutes on medium heat. Add the shrimp and remove from heat. Give it a toss and make sure the shrimp is fully coated with the sauce. Garnish with green onion, serve with rice.

SAUTEED VEGGIES
Steam your veggies for about 57 minutes, I used cabbage, sliced carrots, broccoli and green beans. Add some oil into a wok and add some minced garlic, add the veggies and about 1 tablespoon of soy sauce. Toss to combine. Season to taste, add more salt, pepper and sesame oil (optional)

DESSERT: BROWNIE PARFAITS
1 box brownies, cooked per directions and let cool completely (I used Betty Crocker brand)
Chocolate syrup

For the chocolate whipped cream, into a large bowl add 2 cups heavy cream, ¼ cup powdered sugar, ¼ cup cocoa powder and 1 teaspoon vanilla extract. Using a hand mixer, whisk until stiff peaks form (about 35 minutes)

To assemble: crumble the brownies into large pieces into a serving bowl, then add some of the chocolate whipped cream and a drizzle of the chocolate syrup. Repeat for the second layer and enjoy.
