Blueberry Cobbler (adapted from Centennial Kitchen Magazine):
Preheat oven to 375F
Ingredients:
1/2 cup butter (1 stick), melted and slightly cooled
2 tablespoons butter for greasing skillet
1 cup allpurpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
Zest from 1 lemon
Juice from 1/2 lemon
1 teaspoon vanilla extract
2 cups fresh or frozen blueberries + 1 tablespoon sugar
Directions:
Place 2 tablespoons of butter in a skillet (or whatever baking container you are using)and place it inside the oven until the butter has melted. Into a bowl, add the flour, sugar, baking powder and salt. Whisk to combine. Add the milk, lemon zest, lemon juice, vanilla extract and the 1/2 cup of melted butter. Mix just until combined.
Remove the skillet from the oven and pour in the batter. Add the blueberries on top. Bake for 30 minutes. Let cool and serve with vanilla ice cream. Enjoy
