TROPICAL SMOOTHIE
1 cup frozen mango
56 frozen jackfruit pods
1 banana, small
1/4 cup frozen passionfruit
1/3 cup water
BANH MI SPRING ROLLS
3oz approx. extra firm tofu, sliced
1/3 cup coconut aminos (or soy sauce or tamari)
2 tbsp yuzu hot sauce (trader joe’s)
1/3 cup sesame oil
4 spring roll papers
sriracha mayo
sichuan chili oil
ROASTED ASPARAGUS & MASHED POTATOS
2 yukon gold potatoes, small medium
1.5 tbsp butter
1/4 tsp garlic powder
1 tbsp plant based milk of choice
1/2 bunch asparagus*
1/2 yellow onion*
1 2 tbsp gochujang*
*Roast at 400 F for 20 25 mins
CASHEW QUESO
1 cup cashews*
1 + 1/4 cup water
1 + 1/2 tbsp olive oil (or avocado oil)
1/3 cup nutritional yeast
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp white pepper (or black)
1/2 yellow onion, diced
13 small plum tomatoes, diced
1 tbsp pickled jalapeños (optional)
4oz green chilis
*cover with water and soak for 68 hours (refrigerate)
Simmer on low med heat until warmed through
WATERMELON JUICE
4 cups frozen watermelon
1 small lemon (or lime)
fresh mint leaves
MILK TEA
2 tbsp black tea
16oz oat milk (or plant based milk of choice)
when ready to drink, sweeten as desired
*refrigerate overnight or simmer on the stove to brew
CHERRY PARFAIT
6oz cherry coconut yogurt
23 tbsp plum syrup*
2 tbsp hazelnuts
1 tablespoon dried bing cherries
2 tsp hempseeds

SHEPHERD’S PIE
2 cloves garlic, minced
1/2 yellow onion, diced
1/2 cup black or brown lentils, rinsed
1 + 1/2 cups vegetable stock
1 sprig fresh rosemary
1 spring fresh thyme
1/2 tsp sage
1/4 tsp garlic powder
1/4 tsp onion powder
salt + pepper to taste
1 2 tbsp vegan butter
1 2 tsp quinoa flour (or flour your choice)
top with 1 + 1/2 2 cups mashed potatoes*

top with:
golden kiwi
yellow dragonfruit
banana
mango
hempseeds
GENERAL TSO TOFU
bok choy
3oz extra firm tofu, cubed
