Bone Broth Recipe:
3 pounds assorted grassfed beef bones
2 stalks celery, cleaned and halved
2 large carrots, cleaned and halved
1 onion, quartered with the skin on
1/2 cup red wine or 1 ½ tablespoons raw apple cider vinegar [insert icon: pantry staple]
Filtered water

Roast the bones for 10 minutes at 400°F on a sheet tray in the oven. For a gelatinous and nutrient dense broth, use a combination of bones like knuckle, neck, and marrow bones. Place all ingredients in the instant pot or pressure cooker along with a 10 black peppercorns and fill with enough water to just cover the bones. Soak the bones for 30 minutes. The acid in the wine or vinegar will help draw out minerals from the bones. Add some more water to reach the maximum line in the pressure cooker and pressure cook on high for 3 hours. Carefully release the pressure. I take the pot outside to do this, so the kitchen doesn't smell like a barn. Strain broth and save bones for another use. Let cool to room temperature. You may have to wait overnight. Store in fridge for 7 days or freeze for 6 moths.

Once cooled, you need to remove the fat layer on top of the broth. You can use it for cooking or toss it away. To serve, warm a cup and add a pinch of good sea salt. Enjoy!

Make another batch with the same bones and add one fresh roasted bone to the pot. You can do this a third time too if you have fridge space! The cost per gallon comes down to $5’ish compared with $40/gallon for store bought. Winning!
