As a result of the collaboration between the Museum of Ethnobotany of the Botanical Garden of Córdoba and the Museum of Popular Customs and Traditions of Zuheros, in 2004 all the traditional agricultural techniques for the cultivation of escaña were recovered for research and study, one of The first wheat was domesticated in the Near East approximately 10,000 years ago. It was a unique opportunity to recover the entire process (cultivation, harvesting, grinding and craftsmanship) of this almost disappeared cereal.
