If Molly were a dish, this would be it. This recipe contains three of her very favorite things: meatballs, herbs, and dill pickles. The ingredients may be vast, but please do not let that deter you from making it!! Just make sure you have a nice sharp knife––we’ll be honing our knife skills on the large quantity of herbs which you’ll use in both the pickle salsa and meatballs. In the end, extralarge balls get plopped atop a steaming bowl of pickle rice and smothered in more salsa and salty yogurt sauce for serving. What can I say?? I like big balls and I CANNOT LIE! 1 English cucumber
4 scallions
1 garlic clove

8 baby dill pickles, plus 3 tablespoons pickle brine
½ cup plus 1 tablespoon olive oil, plus more for drizzling
½ teaspoon red pepper flakes
Kosher salt, freshly ground black pepper
1 tablespoon coriander seeds (or 2 tsp ground coriander)
1 tablespoon fennel seeds
1 cup panko
¾ teaspoon ground cinnamon
2 cups long grain white rice
DAIRY
2 large eggs
1 cup whole milk yogurt
MEAT
1 ½ pounds ground meat, such as chicken, turkey, pork, lamb, and/or beef
