The Best Bonchon (본촌)/Kyochon (교촌) Style Korean Fried Chicken Copycat Recipe

This is possibly the best Kyochon or Bonchon Korean fried chicken recipe online. This video shows you how to make Kyochon or Bonchon Korean fried chicken from scratch at home. You should try making this recipe because it's possibly the best fried chicken in the world. My recipe has been honed over many years. Please enjoy!

Ingredients:

12 chicken wings

Sauce:
1 tbsp soy sauce
2 tbsp gochujang (고추장 Korean hot pepper paste)
1/4 tsp minced ginger
1/2 tsp minced garlic
1/2 tsp gochugaru (고춧가루 Korean hot pepper flakes)
1 tbsp mirin
1/4 tsp sesame oil
1 1/2 tbsp sugar

Batter:
1/4 cup all purpose flour
1/2 cup corn starch (or potato starch)
3 tbsp rice flour
1 tsp of baking powder
oil for deep frying
salt

Pickled radish (치킨무):
1 lb Korean radish
3/4 cup water
1/3 cup vinegar
3 tbsp sugar
1 tbsp salt

Directions:
1. To make sauce, mix all ingredients.
2. To make radish, peel and cut radish into cubes. Combine all ingredients and refrigerate for at least a few hours.
3. Mix batter.
4. Heat oil to 350F (175C).
5. Dredge chicken in allpurpose flour, then coat with batter. Deep fry for 78 minutes.
6. Take the chicken out of the oil and rest for 510 minutes.
7. Increase frying oil temperature to 375F (190C). Fry a second time, for 2 minutes.
8. Brush sauce onto wings.
