Tantanmen Ramen Recipe :: Really Easy Asian Ramen Recipe

It's very easy to make ramen that looks like you're eating at a restaurant.
I feel healthy by making broth with soy milk,
Vegetarians can substitute mushrooms for pork.


*** Weighing is scale (g), rice spoon (tbsp), and teaspoon (tsp).

[2 servings]
✤ Ingredients
110g Noodles (per serving)
600ml broth (see below)
Spicy Sesame Sauce (see below)
Roasted pork (see below)
Halfboiled egg (see below)
66g bok choy
400g mung bean sprouts
1tbsp small green onion (optional)

✤ Boiling halfboiled eggs
12 eggs
Water (about 80% of the eggs are submerged)
0.5tbsp salt
1tbsp vinegar

✤ Broth
400ml sugarfree soymilk
200ml water
10g (1tbsp)chicken stock

✤ Roasted Pork
100g ground pork
15g (1.5tbsp) minced garlic
12g (2tbsp) chili oil
12g (2tbsp) cooking wine
3g (0.5tbsp) soy sauce
10g (0.5tbsp) toban djan (substituted with gochujang or soy sauce

✤ Sesame Sauce
Tahini 20g (2tbsp) sesame paste
6g (1tbsp) soy sauce
6g (1tbsp) chili oil

✤ If there is no Tahani sauce
18g (3tbsp) ground sesame seeds
6g (1tbsp) Vegetable oil(can be used cooking oil)

✤ TIP
It's not very spicy (by my standards...), but if you add more chilli oil as a topping like I did at the end, it becomes very spicy.
You can substitute chicken or mushrooms instead of pork.
