Southern Pinto Beans In The Instant Pot Video 1

1 chopped yellow onion
4 garlic cloves minced
2 pounds pinto beans
2 tbsp bacon grease or oil or butter
12 oz. of country cured ham or a ham bone or salt pork or smoked ham hocks
16 cups of water
Salt & Pepper to taste

Press the Sauté button on your Instant Pot and put bacon grease in the bottom. Let it melt and add your chopped yellow onion and garlic. Sauté for 2 to 3 minutes.
Next, add your Country Ham& dry pinto beans.
Now add water to pan leaving saute function on gently scrape the bottom of the pan to deglaze onions&garlic from the bottom.
Now season with salt&pepper and stir.
Turn off the saute function off by pressing cancel. Then cover with instant pot lid, making sure it's on properly, make sure the knob is turn to the sealing function and not venting.
Turn on pressure cook function set to high. for 1 hour or more to get your beans cooked good and are soft . At the end of cooking when they are don let pressure natural release.
After natural release is done, remove the lid, and stir! You could call them done at this point but I like my beans with lots of juice for eating them with cornbread, if you want beans with thick juices don't add as much water as I do.
We serve our with cornbread and sliced onion on the side, or greens, fried potatoes or salmon patties.
