Today I smoked a 4.5lb pork loin on my Pit Boss Austin XL. I used some Southwest Hot Mustard for the binder and rubbed it with some Suckle Busters Hog Waller. The total cook lasted 2 hours. The cooking temp was 250 until an IT of 145 was reached.
