INGREDIENTS

1 lb ground Italian sausage
1 medium onion, diced
2 cloves garlic, minced
2 sprigs fresh thyme
1/4 tsp red pepper flakes (optional)
1/2 tsp black pepper
1 tsp kosher salt
2 tsp Worcestershire sauce
2 lb cabbage
2 tbsp apple cider vinegar
1 tbsp light brown sugar
1/4 cup chopped fresh parsley

INSTRUCTIONS

In a large 12inch skillet or braiser, brown the sausage, onion, and garlic over medium heat, 68 minutes. Add the fresh thyme, red pepper flakes, black pepper, kosher salt, and Worcestershire sauce and stir to combine them into the sausage.

Cut the cabbage into 1/4 to 1/2inch slices. Add the cabbage to the skillet. The cabbage will be heavily mounded at first. Place a lid over the cabbage to begin the cooking process and wilt the cabbage, 46 minutes. When the cabbage begins to decrease in volume, stir the cabbage into the sausage and cook until the cabbage is softened evenly, 46 minutes.

When the cabbage is softened, add the apple cider vinegar and brown sugar. Stir into the cabbage the sauté to evaporate most of the liquid, 34 minutes. Once cooked, remove the skillet from the heat. Sprinkle with the parsley and serve.
