There are two parts of making good roasted chicken: crispy skin, and tender meat. Good ingredients are always the first step to success in the kitchen. The fish and chicken these days are mostly very bland in flavour, this could be due to industrial production and them being artificially bred. And chicken these days don't taste like chicken anymore, you'd require a lot of seasoning to cover up the lack of flavours from these ingredients. Mr. Panda usually jokes about it saying, "what's actually the main ingredient? are we actually eating roasted chicken or just roasted seasoning?" This is why the first step isn't to talk about how you'd be cooking it, but rather where to get a chicken of good quality.
