Glass noodle salad has wonderfully refreshing flavors with lots of crunchy vegetables. Glass noodles are considered a good healthy food because they are made from mung bean starch.

Ingredients:
8 oz. or 220 g. glass noodles (bean threads)
1015 dried shrimp, soaked in roomtemp water
¼ lb or 1/2 cup ground pork/chicken
½ cup tomatoes, wedges
½ cup or ½ small onion (red or yellow), julienned
½ cup carrot, julienned
½ cup celery, cut into 1” pc
6 shrimp and/or pork patty roll optional
¼ cup crushed roasted peanuts – Optional

Salad Dressing

2.5 tbsp fish sauce
2.5 tbsp lime juice
1 tbsp sugar (Palm or regular)
1 tsp chopped garlic
14 Thai chilies, to taste

INSTRUCTIONS

Soak glass noodles in roomtemp water for 10 minutes to soften.
Drain & cut noodles a few times to shorten them.
Mix the dressing ingredients together to dissolve sugar a bit.
Soak dried shrimp in hot water for 10 minutes. Pound or mince to
small pieces by a knife or a grinder/food processor.
Add all vegetables to a mixing bowl, tomatoes, onion, and celery.
Cook the ground pork/chicken in a small sauté pan in a little bit of
water. Transfer the pork, not the liquid, to the bowl. With the same
pan, add shrimp, a little water and cook just until done. Add the
shrimp to the mixing bowl as well.
Bring a pot of water to a boil, cook the noodles until done per
package instruction. Taste the noodles to check for doneness.
Rinse noodles until cold and drain them well.
Add noodles, dried shrimp and dressing into the mixing bowl then
toss everything together.
Transfer to a serving dish, and sprinkle with roasted peanuts
optional.
Serve for 23 pp
