Excited to share another 99 Ranch Recipe with you.

Have you ever tasted these Korean Black Bean Sauce noodles? This is similar to the Chinese version but uses a Korean black bean paste. I've seen this dish in Korean dramas but never tried to make it myself until now. I asked my Korean friend Jennifer to help me make this easy homemade dish. Her daughter loves her version. This is a comfort dish that is perfect for a cold day. Salty and lots of flavor from the black bean sauce, sautéed onions and vegetables smothering the noodles.

Ingredients:

• 2 lbs Korean noodles, Shanghai noodles, Udon, or Ramen noodles
• 1 cup of zucchini cut into 1/4inch cubes
• 1 cup of potato, peeled, cut into 1/4inch cubes
• 1 cup of cabbage cut into 1/2inch cubes
• 1 extralarge onion or 2 cups of onion 1/2inch cubes

Meat marinade:
• ½ lb pork, chicken, beef, or tofu, cut into ½ inch cubes
• 1 tbsp soy sauce
• 1 tbsp cornstarch
• 1 tbsp cooking oil
• ¼ tsp baking powder optional
• 1/8 tsp salt
• 1/8 tsp pepper

Jajangmyeon sauce:

• 5 tablespoon of Korean black bean paste (Chunjang), may be labeled as jjajang (짜장), preroasted Chunjang is fine too
• 1 can or 2 cups chicken broth
• 34 tbsp vegetable oil
• 2 – 3 tsp brown or regular sugar
• 3 tbsp corn starch combined with 3 tbsp water in a small bowl, set aside
Toppings:
• 1 cucumber, cut into thin matchsticks for garnish
• Hardboiled egg, peas, or sweet corn – optional
• Gochugaru (Red chili pepper flakes) – optional

Sauce Instructions:

1. At medium low, heat up cooking oil on the wok, add the black bean paste and stir it constantly for 34 minutes. This is to cut off the saltiness and get the roasted flavor. Do not burn it. If you get the preroasted black bean paste, skip this step.
2. Scoop out the black bean paste and set it aside. Leave the oil in the wok to use in the next step.
3. Turn up to medium high heat and add choice of your meat and stir until ½ cook.
4. Add onion and stir until fragrant.
5. Add potato, cabbage, and zucchini and keep stirring for about 3 minutes to get all the vegetables coated with oil.
6. Add chicken broth, sugar, and rice wineoptional, bring it to a broil, then simmer it with the lid closed for about 10 minutes.
7. Stir in the starch water little by little. Keep stirring until it’s well mixed and thick. Remove from the heat.
8. Serve with choice of your noodles
Noodles Instructions:
Noodles for jjajangmyeon can be found at Asian grocery stores. The noodles are thick and chewy. Shanghai noodles, Udon, or Ramen noodles can be substituted. Boil and drain the noodles. Rinse and strain in cold water or follow the package instruction.
Jajangmyeon assemble:
1. Put one serving of noodles onto a serving plate/bowl and add the jajangmyeon sauce over top.
2. Garnish with cucumber strips, peas, or corn and serve immediately with kimchi or yellow pickled radish.
Serving: 4 servings
