Cakeshare, my Pistachio New York Cheesecake recipe! ASMR
Experiment and relax at the same time listening to the noises generated by the kitchen and by the preparations themselves, try to replicate my desserts by turning off any source of noise and appreciating the moment!

Base:
100g biscuits
45g butter
Cheese cream:
280g Spalmable cheese
12g rice flour
75g sugar
1 egg
1 yolk
140g acid cream
110g fresh cream
80g pistachio paste
1 pinch of salt
Pistachio ganache:
60g fresh cream
60g white chocolate
15g pistachio paste
1 pinch of salt

Doses for: 6/8 people
Cheesecake diameter: 16 cm

I could have named this video with "a dessert that everyone should try" !! We all know the classic cheesecake but to give a good welcome to autumn, something cooked but at the same time fresh was needed. This New York Cheesecake was right for me!
The preparation is very simple, the most difficult part is probably the wait. I would like to make a small clarification on the pistachio cream: try not to incorporate too much air inside because the upper part in cooking could crack. As you have noticed cooking in the oven, it is in Bagno Maria, this is used to montene the wet oven and will make the cake softer. Make sure to pour hot water !!
Once cooked, leave the cheesecake in the oven off for at least 1 hour with the semi open window.
After 4/5 hours in the fridge, gently remove the mold and parchment paper, it is a very delicate cake so be careful.
The surface of the cake will take on a slightly concave shape, this will make the decoration with the pistachio ganache and the pistachio grains possible. Try to be very delicate when the ganache verses, take all the time you need.
Once the rest time in the refrigerator is spent, the cake is ready to be eaten, as well as known by the video, the ganache is still soft but perfect for enjoying a creamy cake. If you prefer to have a more precise slice I recommend you leave it in the refrigerator at least 2 hours.
