Philly Cheesesteak Pasta - sooooo good! Meal prep with me - 4 meals!

PHILLY CHEESESTEAK PASTA

INGREDIENTS
2 Tablespoons olive oil
1 cup bell pepper, sliced (about medium 1 pepper)
1 cup onion, sliced (about 1 medium onion)
8 ounces mushrooms, sliced
1 pound sandwich steaks, thinly sliced
11/2 teaspoon kosher salt
¼ teaspoon black pepper
½ teaspoon garlic powder
1 Tablespoon cornstarch
2 cups beef broth
½ cup heavy cream
1 teaspoon Worcestershire sauce
2 cups penne pasta
1 ¼ cups mozzarella cheese, shredded
INSTRUCTIONS

Heat oil in a large saute pan over medium high heat.
Add peppers, onions and mushrooms to the pan and saute to soften, around 5 minutes.
Add beef and season with salt, pepper and garlic powder. Saute for 23 minutes to begin browning.
While beef begins to brown, whisk together corn starch, broth, heavy cream and Worcestershire sauce until well combined. Pour into the pan and mix well.
Add pasta to the pan and bring to a boil.
Cover and reduce heat to medium. Simmer for 15 minutes stirring periodically.
Remove cover and stir in ½ cup of cheese.
Sprinkle the remaining cheese on top and cover and cook for 5 more minutes to melt the cheese.
Serve and enjoy!


CHICKEN SALAD

Servings: 12
Ingredients

3 12.5 ounce can chicken breast
1 cup celery, finely chopped
6 tablespoons shallot, finely chopped
1 ½ cups of grapes, halved and quartered
1 cup Granny Smith Apple, diced
3/4 cup Miracle Whip
6 teaspoons red wine vinegar
3 tablespoon lemon juice
3/4 teaspoon onion powder
3/4 teaspoon garlic powder
3/4 teaspoon Italian seasoning
salt and pepper to taste
3/4 cup slivered almonds

Instructions

Chop celery, shallot, grapes, and apple
Add the chopped mixture and the almonds to the bowl with chicken
Whisk together Miracle Whip, red wine vinegar, lemon juice, and spices
Add chicken to bowl and toss until coated
Salt and pepper to taste
Serve over lettuce or on your favorite bread


ITALIAN BEEF AND RICE BOWL (today I used sausage!)
This hearty and cheesy Italian Beef and Rice Skillet is ready in less than 30 minutes for an easy weeknight dinner the whole family will love!

Ingredients

1 onion, diced


2 lb. sausage, browned


30 oz original diced tomatoes, canned


3 cups mixed veggies, peas and carrots


1.5 cup brown rice


4 cups beef broth


2 tsp dried oregano


2 tsp garlic salt


1 tsp dried basil


1 tsp pepper


3 cups mexican style cheese

Instructions

Brown the ground beef and onion in a large skillet until no longer pink, drain any excess fat.


Return skillet to stove top and add in the tomatoes, mixed veggies, rice, beef broth, oregano, garlic salt, basil and pepper. Stir until combined and bring
to a light boil. Reduce heat to a simmer, cover and let cook until rice is tender (about 17 minutes).


Fluff rice with fork and top with Mexican style cheese. Cover with the lid for about 3 minutes to let the cheese melt. Sprinkle with parsley if desired. Enjoy!
