The refreshing orange almond cream and soft, sweet orange cream were truly fantastic.

237ml = 1 cup
15ml = 1Tbsp
5ml=1tsp
1 egg (53 g without shell)
Heavy cream (35% milk fat)
(Chocolate is chopped, flour is before sifting)

130g allpurpose flour (3/4 cup + 2 Tbsp)
45g Sugar powder (1/3 cup)
20g Almond Flour (100% Almond) (2 Tbsp + 1 tsp)
a pinch of salt

80 g unsalted butter (1/3 cup + 2 tsp)
30 g eggs (2 Tbsp)


● Orange Almond Cream

50g unsalted butter (1/4 cup)
50g sugar powder (1/3 cup + 1 Tbsp + 1tsp)
50g (1/3 cup) almond powder
8g cake flour (1Tbsp)

1 egg (50 g)
3ml rum

2/3 Orange Zest

● Refreshing, sweet orange cream
85g sugar (1/3 cup + 1 Tbsp + 1 tsp)
15 g (1 Tbsp) cornstarch
1g salt

2 eggs
85g orange juice (1/3 cup)
15g lemon juice (1 Tbsp)

50 g (1/4 cup) unsalted butter

3ml Orange Liqueur (Legoll Orange)
25g orange confit, chopped

2g gelatin

● Orange jelly
170 g orange juice (warm)
25g sugar
5g lemon juice

5 g powdered gelatin
25g water
food coloring (optional)

● Orange confit (3mm thick)
12 oranges
160g water (1/2 cup + 2Tbsp + 2tsp)
110g sugar (1/2 cup + 1 Tbsp)
15 g orange liqueur (Legoll Orange) (optional) (1 Tbsp)
