Ingredients:

1 lb (450g) ground bacon (ask your butcher for ground bacon or pulse bacon slices in a food processor until finely chopped)
1/2 lb (225g) ground pork (to balance the fat content and add texture)
1 medium onion, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs
1/2 cup milk
2 large eggs, beaten
1/4 cup fresh parsley, finely chopped
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
1/2 teaspoon ground black pepper
1/4 teaspoon ground nutmeg
Optional: 1/4 cup Irish whiskey (for added flavor)


For the glaze:
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
1 teaspoon mustard powder

oven to 350°F (175°C) 1 hr foil on. Add glaze 24 mins cook
