This is another episode of #ranchrecipe from 99 Ranch Markets. I'll show you how to make my two favorite chicken wings. One is sticky, sweet, and spicy and the other favorite of mine has a lot of fresh garlic and soy sauce. Both are very popular!

Thai Sweet and Spicy Chicken Wings – Crispy wings with sweet and spicy Thai seasoning. Crazy delicious wings you can't stop eating! It’s great for appetizers and perfect with warm sticky rice. It was one of the most popular appetizers when I owned a Thai restaurant for 22 years.

Thai Garlic Soy Chicken Wings – Simply and easy recipe, great for kids or anyone in the family and perfect with warm sticky rice or steamed rice.

Thai Sweet & Spicy Chicken Wings

Ingredients:

1.5 – 2 lb
chicken wings
3 tbsp
cooking oil
2 tbsp

2 tbsp
oyster sauce

tomato sauce/ pasta sauce/ or ketchup
1.5 tbsp
lemon juice or 1 tbsp lime juice
1 tbsp
chopped garlic or more if you love garlic
1 tbsp

1 tbsp
soy sauce

fish sauce




1 tsp
grated ginger

fresh Thai chili or ¼ tsp chili flake
1 cup
basil leave optional
1/3 cup
sugar

Instructions:

Prepare wings
By Air Fryer:
Preheat Air Fryer to 400 degrees F (200 degrees C).
Oil the cooking rack, place chicken wings on it. Air Fry for 15 minutes, flip to another side and air fry for another 1015 minutes, until golden brown. Move to serving dish/platter.
By Deep Fry:
At high heat, fill up the oil to 2 3 inch deep
Fry basil leave first and set it aside Optional
Fry chicken wings for about 15 minutes or until golden brown, flip it from time to time. Move to serving dish/platter.

Hot Sweet Spicy Sauce
At medium heat, in a medium skillet sauté garlic, ginger and chili in cooking oil until soft. Add tomato sauce, oyster sauce, soy sauce, fish sauce, sugar, lemon juice and sugar. Reduce to low heat, sauté for about 5 minutes or until the sauce thickens, adding cornstarch is optional. Let it cool down and pour over crispy chicken wings, top with fried basil leaves….Enjoy!

Thai Garlic Soy Chicken Wings

Ingredients
1.5 2 lb chicken wings or drumsticks
1 – 2 tbsp minced garlic
2 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp black soy sauce optional
1 tbsp palm or brown/regular sugar
1 tbsp cilantro stem (45 stems)
½ tbsp fish sauce
1 tsp white peppercorns or powder

Marinate Chicken:
Poke with forks to get the marinade into chicken. Use a knife to cut a little next to the bone to help the chicken cook faster
Combine all marinade ingredients in a large mixing bowl.
Marinate chicken for at least 1 hours, preferably overnight in the refrigerator. Bring them to room temperature before cooking.

Grilling:
Preheat your grill medium low 250 – 300 F (120 – 150 C) Clean & oil the grill.
Place chicken skin side up, cover it, check and flip over from time to time every 35 minutes. Coat chicken with the leftover marinade for more flavor and moist.
Total grill time is about 20 – 25 minutes depending on the size of the chicken or until cooked. The chicken should reach 165 F.
Air Fryer:
Preheat your air fryer to 380° F

Please chicken skin side down onto the basket. Air fry for 8 minutes then flip to the other side and air fry for another 8 minutes. Coat chicken with the leftover marinade for more flavor and moist.
Check if it’s cooked by checking the temperature 165 F. If it’s not fully cooked, air fry another 23 minutes each side.
