This Meat 2 Market workshop was conducted at the Intertribal Agriculture Council's Annual Conference hosted at the Palms Resort in Las Vegas, Nevada from December 1214, 2024.

How do we address the need to keep food and money circulating within your Native community while still aiming for profitability and economic resiliency for your business? How do we get out of the sale barn rut? In one of the more complex and dynamic themes of our Meat to Market program, this workshop will teach strategies for a mixed revenue stream approach that embraces directtoconsumer AND wholesale sales for revenue stability while advocating for and teaching methods towards playing an active role in community food access as part of your meat business model. We will address culturally appropriate market building: exploring outside markets while participating in local food security through creative marketing, pricing, and operations. We will explore and embrace the inherent conflict of food sovereignty issues and external market expansion, encouraging simultaneous communitycentric vision while going after those “offRez” markets. We will address themes such as cutouts that maximize your carcass utilization and answer needs for a variety of markets; how to set up sliding scale pricing; wholesale pricing structures that vary based on the customer but never dip below your cost of production, balancing delivery and operational logistics within and beyond your community. Our goal is to encourage producers to trust your inherent skills as an Indigenous individual in understanding where our food comes from while simultaneously achieving higher financial return and stability through a blended DTCWholesale sales approach, alongside community food security goals. This workshop will include a short presentation on practices and strategies followed by a round table discussion looking at reallife solutions put in play by Native producers.
