My mom used to cook this dish for me all the time. But soaking and cooking took hours. I don't have the time for that so I needed a faster recipe. I found the Braised beef recipe from Omnivore’s cookbook author Maggie Zhu. Link provided. She includes basic steps with full descriptions and alternative ingredients. This was very simple to understand so I decided to attempt this for the first time. It was delicious. I added bean curd sticks to the recipe because my mom always added it. Visual aids made this recipe easier to understand.
